Updated: May 21

Toasted pecans sweet spices like cinnamon, cardamom, and culinary lavender along with honey and vanilla bean adorn this delicious sourdough bread like a celebration of the harvest! It is amazing toasted or used for French toast, but we are particularly fond of it as the bread for a good chicken salad sandwich.

With all the varieties of apples available this time of year, look for a tart variety that has a little crunch. Anything good for pie making will be fantastic for this bread.

6 cups Panhandle Milling Organic Bread Flour

1 1/2 cups lukewarm filtered water

1 tsp. salt

1 cup sourdough starter

1 cup peeled and chopped tart apples

1 Tbsp. Cinnamon

1 tsp. ground cardamom

2 tsp. culinary lavender

1 Tbsp. vanilla bean paste

Cover and let rise at room temperature about 12 hours or until doubled in size. When you’re ready, shape dough as desired. This recipe will yield 2 standard loaves of bread. Place into a greased loaf pan, and lightly mist or brush the top with oil. Let rise about 2½ hours or until doubled in size. Preheat oven to 400°F. Bake 35-40 minutes until golden brown (at least 195°F internal temperature). Yield 2 loaf.
