Initially, this recipe was printed in an old church cookbook from the 1940s. Over time, the spices and flavors have been adjusted to be a little more gourmet, but the concept of this cake is the same. It uses fresh apples in the batter that are diced into chunks. When it is baked and sliced, apple pieces are perfectly cooked and spread throughout the cake. For an elegant touch, we drizzled the finished cake with orange marmalade glaze. It keeps the cake moist and adds a festive shine. Enjoy!

Orange Glazed Apple Spice Cake
n
2 cups sugarn1/2 cup buttern2 eggsn2 tsp vanilla bean paste or vanillan½ cup buttermilk or yogurtn2 cups Panhandle Milling Organic All-Purpose Flourn1/2 tsp pumpkin pie spicen1 tsp cinnamonn1/2 tsp saltn1 tsp sodan3 tart apples (granny smith or Jonathan) peeled, pared and diced
n
1 cup dried cranberries
n

n
Directions:

n
Wash and sanitize hands, tools, and work surfaces.
