Understanding the difference between
mixes, blends, and concentrates

Working with Panhandle Milling means working with the preeminent experts in the baking industry. Our facility based in Dawn, TX offers a wide variety of dry-base, concentrate, mix, and blend options with a particular focus on clean-label formulation. Below we’ll go through the differences between baking mixes, bases, and concentrates to help you make the best decision for your baking and formulation needs.

What is a baking mix?

A mix is considered a complete blend. Typically, this is a just-add-water (or in some cases, yeast) blend. A baking mix is a great option for retail-ready products that make things as simple as possible for your end customer. Some of our most common baking mixes include a pancake mix, pizza dough mix, and homemade tortilla mix.

What is a base?

In many cases, a base requires extra ingredients such as eggs, milk, yeast, and oil. A common example of a baking base would be a box cake mix or muffin mix. A Panhandle Milling base is perfect for commercial bakeries, grocery store bakeries, and retail-ready products, alike. A base is often more shelf-stable than a baking mix as it doesn’t contain excess fats and oils that can go rancid.

What is a concentrate?

A baking concentrate is similar to a base in many ways but has a higher flour-to-base ratio.

A baking mix for every need

Specializing in clean-label formulations, our sourcing strategy focuses on finding the highest-quality experience at the best price. Don’t see anything you like? You can work one-and-one with our R&D team to create your perfect product.

Clean-label mix

Clean-label formulation is an essential part of Panhandle Milling’s value proposition to our customers. We take traditional, household favorites and cut the ingredient deck down to just the essentials. You can count on us for healthier mixes that don’t sacrifice flavor or functionality. Panhandle Milling is your partner in creating truly delicious mixes you and your customers can feel great about.

Pancake mix

Panhandle’s range of pancake mixes is the perfect addition to any retail portfolio. Our preformulated mixes range from a multigrain pancake mix to an organic buttermilk pancake mix. You can also work with our team to create a pancake mix that’s right for you. Panhandle Milling is the perfect partner when it comes to creating a crowd-pleasing breakfast baking mix that will set you apart from the competition!

Bread mix

If we know one thing, it’s bread. Our formulation experts have a combined over 50 years of experience in baking formulations and bread is nothing if not their passion. Panhandle Milling is not interested in setting our partners up with just any standard bread mix, we are committed to working closely with them to create the perfect bread mix that offers something new and different to their customers or helps them

Tortilla mix

Whether you’re a tortilleria looking to streamline your production process, a commercial bakery wanting to create a delicious product, or a retailer wanting to get a clean-label tortilla mix onto your store shelves, Panhandle Milling has the perfect tortilla mix for you. Our customers have the option to choose from one of our preformulated mixes or partner with our formulation team to create a proprietary tortilla mix of their own. We want to help you bring full, authentic flavors to the table all with the ease of a baking mix.

All purpose baking mix

You may be wondering, “what is an all purpose baking mix and should it be a product I carry?” An all purpose baking mix recipe typically contains four main ingredients: flour, baking powder, salt, and some type of fat or oil. By having minor ingredients already added in, an all purpose baking mix can help cut down on the time it takes to make everything from biscuits to pancakes to muffins. It truly is an amazing product for any bakery or home baker to have on hand. And, by virtue of working with our team here at Panhandle Milling, you know you’ll have an ingredient deck you can trust.

Finding the right
baking mix for your retail store

Finding the right baking mix recipe for your retail store can seem like a daunting task. What trends are on the horizon? What ingredients should I be avoiding? What’s the right price point for my customer base? Should I bring in a single mix or a bundle of various mixes? Customers are constantly bringing us these questions, and so many more because we truly understand not only the baking mix world but the retail space. Our sales and marketing teams are positioned to help you make the best, most informed decisions so your business can thrive.

What is the minimum order quantity (MOQ)?

Unlike other mix manufacturers who have high order quantity barriers to entry for their customers, our minimum order quantity for mixes is only 2,000 lbs. This can be a big bag or retail pack order, with options for bulk orders, too. Our small MOQ makes working with Panhandle Milling a great option for smaller businesses getting off the ground or for large companies looking to test a new baking mix in the marketplace!

Do you offer gluten free mixes

While we don’t have the ability to create a Certified Gluten Free baking mix, we can create a gluten free baking mix recipe. You can expect creativity and innovation in our use of gluten-alternative flours, like an amaranth bread mix or a rice flour cake mix. Our R&D team is seasoned in making gluten-free bakes still taste amazing and retain the functionality our customers have come to love and expect from our wheat flour-based mixes, too. Worried about cross-contamination? Panhandle Milling’s mix equipment goes through extensive allergen cleanouts after each batch to ensure quality, safety, and purity of taste for every product that comes out of our facility.
